A look back at history tells us that Zhang Zhongiing, the founder of Chinese herbal medicine almost two millenniums ago, returned home one winter to find his fellow villagers suffering from frostbite to the ears. He brewed up herb and mutton soup, then wrapped the cooked meat and herbs in a skin of wheat flour in the shape of an ear, returning them to the soup to cook.Legend says that when the villagers ate the soup and jiaozi their circulation improved and their ears were healed.
